Costa Rica, renowned for its lush rainforests, pristine beaches, rivers, and rich biodiversity, is a global favorite among travelers. In addition to its natural beauty, the country boasts a long-standing tradition of producing high-quality coffee, cultivated since the early 19th century across eight distinct regions.

Located in San José province, Los Santos is a mountainous region in central-southern Costa Rica, encompassing the cantons of Dota, León Cortés Castro, and Tarrazú. The Santa Elena Estate, situated in Tarrazú, is owned by Luz Marina Trujillo, a third-generation coffee producer. Through her leadership, the farm takes a holistic approach to sustainability, minimizing synthetic inputs and utilizing a closed-loop fertilizing system that composts discarded coffee pulp also using worms. Their water treatment system meets the Costa Rican government’s high environmental standards, and preserves the cleanliness of the river that flows through their land. In addition, the farm works in line with NAMA Café Costa Rica to achieve lower CO2 emissions.

This lot consists of 100% Catuai and Caturra coffee varieties. In recent years, the farm has also introduced other varieties such as Catigua, Pacamara, Victoria 4, San Isidro 49, and SH3. While most of the coffees from Santa Elena Estate are washed, this honey-processed lot highlights their innovative approach. During the harvest season, spanning from November to March, ripe coffee cherries are hand-picked and brought to the wet mill, where they are floated to remove any defects. The cherries are then depulped and directly laid on patios to dry under the sun. At this stage, the parchment absorbs the sweetness of the mucilage, resulting in the distinctly sweet and intense profile of honey-processed coffees. Finally, the coffee rests in “silos” (warehouses) before being cleaned and prepared for export.

Out of the tropical countries, Costa Rica is probably the most environmentally conscious one. More than 25% of the country's land is protected in national parks, while 5% of the global biodiversity can be found in this rather small country. Next to this impressive progress in conserving nature, Costa Rica has also established a reputation for stable economic growth. Costa Ricans call themselves "ticos" and strongly believe in the absence of a national military. No surprise, this progressive nation is said to be one of the happiest people on earth according to the Happy Planet Index. We believe this thoughtfulness can also be found in each cup of coffee from this Central American beauty.

The first coffee production in Costa Rica dates back to the late 18th century. The government created major incentives to cultivate coffee by giving farmed land to the growers for free after five years of coffee cultivation. It turned coffee into the most important export good and was a substantial part of the country's economic rise.

However, until the mid-1990s, coffee production also put its shadows on Costa Rica: water used for fermenting the beans left the washing stations without filtering while deforestation had reached a critical level. It was in 1995 when the government stepped in once again and caused a radical change by creating strict environmental laws in coffee production.

Nowadays, Costa Rica has a reputation for having some of the highest production and quality standards. This not only includes high quality standards with respect to coffee cups but also to social welfare and environmental-friendly processing technologies in production. Costa Rican coffees tend to have a medium body, are well-balanced surprise with a fresh and sweet acidity.
