On the quest for distinguished coffee, you cannot miss Colombia. Colombia’s quality reputation stems from hard work and excellent terrain. A unique topographic characteristic also comes into play when describing the various facets of Colombian coffees: the three cordilleras of the Andes mountain range. Several microclimates are formed between and within the mountain ranges, resulting in exceptional conditions for high-quality coffee production.

One of the most renowned coffee-producing regions is Huila - and for good reason. Huila boasts a perfect blend of fertile soils, high altitude, and an ideal climate for cultivating specialty coffee. Located in the municipality of Acevedo, Finca Las Flores stands out in this region. Here, Jhoan Manuel Vergara produces exceptional micro-lots, growing varieties such as Pink Bourbon, Tabi, Java, and Maracaturra.

Established in the 1990s, Finca Las Flores has evolved from an 18,000-tree farm to a sprawling estate with 90,000 trees. In 2006, the Vergara family embarked on their specialty coffee journey by participating in the Cup of Excellence competition. Since then, and now with the support of their son, Jhoan, they have dedicated themselves to enhancing and distinguishing their coffee offerings.

An exceptional example of the family's dedication is this micro-lot of washed Tabi, sourced through our friends at Loha Beans. The cherries were hand-picked at optimal ripening points with brix degrees of 22-26°C, then disinfected and fermented in plastic bags for 12 hours and then for another 24 hours in tanks. After de-pulping, the beans are anaerobically fermented with their mucilage for another 48 hours, process which is then interrupted with hot water. Finally, the coffee is dried in hermetically sealed stainless steel dehumidifiers until reaching moisture levels of 11%.

Historically, Colombia has been shattered by various periods of violence and setbacks. However, in the past 20 years, Colombia has leaped to becoming an economic powerhouse in Latin America. On the quest for distinguished coffees, you simply cannot miss Colombia. Its quality reputation stems from hard work and excellent terrain.

Colombia's natural beauty stems from its extreme diversity: two oceans, snow-peaked mountains and glaciers, endless deserts as well as the Amazon basin are found in this unique South American gem. The west of the country is dominated by three Andes mountain ranges, called the Cordilleras.

Due to their proximity to the equator, several microclimates are formed within these mountain ranges. Add to that altitude ranges from 800 to 2,200 meters, and you will start to realize why Colombian coffees are so diverse.
