Microlots are harvested and processed separately from the rest of a farm’s production for various reasons. Differences in coffee variety, shade cover, or sun exposure across different parts of the farm can all contribute to a lot’s unique characteristics. Once selected, farmers can apply different processing methods to further distinguish their coffees and identify their highest-quality lots.
